Strawberry Butter-cream ice candy (sugar free, silky smooth & ketogenic) or Bulletproof Coffee/ Cocoa ice cream

Strawberry Butter-cream ice candy (sugar free, silky smooth & ketogenic) or Bulletproof Coffee/ Cocoa ice cream

Do you like ice cream? Feel like the only ice cream worth heaving is italian ice cream from the gelateria? You tried numerous home ice cream methods but they go rock solid and by the time you can get the spoon in the stuff is a soggy puddle of liquid again? Don't despair, I may have a solution for you. This recipe makes creamy ice cream you can make at home. This version is based on a butter cream with fresh strawberries blended in. I made little ice cream candies in a ice cube mould. Don't like strawberries in ice cream, try Bulletproof Coffee/ Cocoa ice creams, as mini bite ice-candies or as ice pops. Don't know why Bulletproof coffee is special and health promoting because it does is processed to give you a low-toxin bean? Get the low down here. Once the strawberry version was set I decided since many people think chocolate and strawberries are a good fit, i covered a few frozen...

New dairy free pancakes suitable for Paleo’s sweetened with Stevia

New dairy free pancakes suitable for Paleo’s sweetened with Stevia

My alternative sweet breakfast or on the go lunch for everyone following a lower carb diet that can not face a savory paleo breakfast. This recipe is an evolution from my previous pancakes, it has no dairy at all. These are very low carb, 6g Carbs with whole recipe, 1.2g per pancake. The pancakes are also very high in selenium which is great "because selenium can protect against the adverse effects of mercury toxicity"  as Chris Kresser discusses in depth in a recent podcast, it is also very important for healthy skin and gut health as disused in this post. I usually actually do not have breakfast any more, I do the Bulletproof Butter Coffee with MCT oil and fast until 2pm to support my ketogenic diet approach. After not having had pancakes for many weeks I had to revert back to them when I had a tummy bug and I kind of couldn't face veg or meat. I made these in the hope that they would not...

Chocolate Mouse Gateaux, light and moist sweetened with Stevia

Chocolate Mouse Gateaux, light and moist sweetened with Stevia

This recipe is actually an assembly of two earlier recipes I posted. Both of which I like a lot and together they are just a perfect light summer cake. I made this for my birthday, it was incredible, melts in the mouth, nice moist sponge and very satiating, no need to over eat. I put spare cake in the freezer and had it when I came back from my holiday, it was just as if I had made it fresh. So if you need to have a treat cake in stock for unexpected visitors, this is perfect. It's also easy to make this cake dairy free, just replacing the double cream with coconut milk will make this as close to Paleo as is possible when making cakes.   If you are wondering what my fancy berry decoration is, they are not some kind of weird frankenberry rasberry-strawberry hybrid, even though they look it! They are in fact Strasberries. The Strasberry is a variety of the wild strawberry, with a raspberry-like appearance, originally developed in...

Gluten, sugar, dairy free Biscuit Sponge base slices with Coconut Manna

Gluten, sugar, dairy free Biscuit Sponge base slices with Coconut Manna

Have you just recently discovered Stevia sweetener, you are unsure how you will be able to make great tasting cakes that are sugar free and turn out to be edible? I can help, the main thing that you need to understand is that the volume of Sugar in any recipe you want to make needs to be replaced with something else, otherwise you will end up with a dry, solid lump. This sponge base is a great base recipe to start many baking adventures from. Make sugar free gateaux or muffins, cupcakes or sheet cakes the sky is the limit. You can decorate it with Coconut mana like I have done in the image above or try my lactose and sugar free "Butter-free Buttercream" made with Coconut oil and natural stevia-sweet extract, good for the gut and the soul. Not too heavy or sweet. Add fruit or nuts and seeds as topping. Fill it with fresh strawberries and whipped cream or just have it as it is, this recipe...

Cheese Cake Souffle – sugar and gluten free with the help of Stevia-sweet

Cheese Cake Souffle – sugar and gluten free with the help of Stevia-sweet

This recipe is great and adaptable  for a super quick healthy treat for 2 any time of the day. I use 2 small ramekins, the good thing is when you only make enough for one sitting there is no chance of accidentally having too much. Although, when you make sweet treats sweetened with natural  stevia sweetener there will not be any longing for more after the first portion as your blood sugar levels will not rise and fall in crazy ways. I have another nice soufflé recipe which does not even require any milk product. - I'll post it next.   Makes: 2 mini ramekins (you can also use tea cups) Prep time: 5 min Cooking: 25-27 min at 180 degree celsius   You need: 2 Eggs (separated) 150g Quark ( you can use fromage fraise, or thick yoghurt too.) 15g Coconut Flour skin of 1/2 unwaxed organic Lemon 1-2  knife-tips Stevia-sweet 90% powder dissolved in 1 table spoons hot water Note: getting the sweetness to the desired level is a matter of trial and error, the best thing is to start with a smaller...
