Gluten free high fiber breakfast PANCAKES with stevia

Gluten free high fiber breakfast PANCAKES with stevia

Alternative sweet breakfast for everyone following a low carb diet that can not face a savory paleo breakfast. As I mentioned in my previous post, - a long time ago, sorry I was so busy there was not time for posting - I am eating as low carb paleo inspired as possible to avoid triggering inflammatory processes in my joints. I used to love porridge in the morning, when I found out I'd best stop having grains I started panicking a bit! What was I supposed to have instead? Meat for breakfast? Eggs every day? My happy medium is to have pancakes with a variety of flavours and organic yoghurt or quark. I know the serious paleos out there will say, there was no dairy in a cave man's diet. I like dairy and do not seem to have any adverse reactions to it, so I like to keep it in my menues. Yes, it does take a little bit of time in the morning to prepare the pancakes, around 20...

Paleo friendly Almond Macaroons with Stevia

Paleo friendly Almond Macaroons with Stevia

Snowball like christmassy almond macaroons with lots of protein and good nut fat. This easy and quick recipe for macaroons is the only baking I have done since my last post and eating an all paleo style diet. A lot has changed in my approach to food and you will see this reflected in my christmas cookie and cake recipes I am going to post over the next few weeks. Because I didn't use any wafers under the macaroons, they are also gluten free - which I have found works better with my digestion. Makes 38pcs (no wafers needed) Prep time: 10min Baking time: 10 min at 180 degree Celsius  Cooling time: 15 min    You need: 175g/ 5 Large Egg whites 100g Almond flour/ ground almonds couple of drops vanilla extract pinch of salt 1-2 knife-tips Stevia-sweet 90% powder dissolved in 1 table spoons hot water Note: getting the sweetness to the desired level is a matter of trial and error, the best thing is to start with a smaller amount of whatever Stevia you have on hand, it can be ready-use, liquid or...

Leftover Fruit bowl, crumble sugar free, with porridge oat base

Leftover Fruit bowl, crumble sugar free, with porridge oat base

Use up your leftover fruit that has been sitting in the bowl for ages. It's so tempting to just get rid of slightly soft and shrivelled fruit; when no one in the house gives the soft kiwi or wrinkly plum another look, it's time to convert these perfectly good fruits into a delicious crumble treat. I don't know why, but I keep buying kiwis and then they don't get eaten. It's probably because its not as convinient to eat as an apple, having to peal or scoop it to get to the flesh. Then there is the chance that it is very sour which also seems to put me off. Last time I had to turn my Kiwis into something to get them eaten, I made the Kiwi Coconut Truffels, all refreshing and just right for summer season. Now that the days have started to get darker, my body calls for warmer and starchier desserts like crumble and pies.   Last sunday my craving for  a sweet treat needed dealing...

Sugar free Pumpkin Brownies with Stevia

Sugar free Pumpkin Brownies with Stevia

Super food pumpkin brownies, all the goodness without the sugar crash after indulging. When you sweeten your brownies with natural stevia-sweet sweetener, you save calories whilst enjoying what you like best - sweet treats, yum yum. You are not a fan of pumpkin? These moist, smooth, creamy pumpkin brownies are the best way to disguise pumpkin and reap the nutritional benefits. Pumpkin is high in vitamin A, potassium, calcium and zinc, and has a low sodium content. Due to the low levels of protein, fat and carbohydrates it is a low calorie vegetable. The protein contained is very high quality and promotes the formation of insulin. Cooked pumpkin meat is easily digestible and high in fiber. Citrulline, an amino acid contained in the pumpkin promotes the excretion of metabolic waste products and detoxification. The high content of potassium, calcium and zinc is striking, alongside a low sodium content, makes the pumpkin a great tool for combating high blood pressure as well as bladder and kidney  problems. The pumpkin I used looked like a flying flower shaped saucer, the flavour was very mild to non existent. Lets look at the recipe, I cooked...

Italian Castagnaccio Chestnut cup cakes

Italian Castagnaccio Chestnut cup cakes

A gluten free birthday treat for fit and health conscious individuals, sweetened with natural zero calorie stevia sweetener. I came across the Castagnaccio – a traditional Italian dessert cake based on chestnut flour - when looking for a baked birthday gift for my super fit Italian friend Martina; she is from Tuscany, so I thought I'd make her a birthday treat that is from her region since she had to celebrate her birthday in England away from family and friends. The recipe was perfectly suited for what I wanted, it is traditional to Tuscany, has healthy ingredients that are great for any health conscious eater and it's suitable to make in small portions and keeps for a few days as we were going out for food she would have to keep it for later. The chestnut flour cake originating from the Tuscan region uses mainly chestnuts, which represented an important widely available food source for the poor peasants and farmers. Even the other ingredients are all locally...
