This is a great zesty plumb cake with crumbles on top, it is similar to the apple sauce cake. The crumbles are crunchy even thought they don’t have any sugar in them at all, instead I use Stevia-sweet Baking Granules 1:1.
You can use any type of zesty autumn fruit for this recipe, berries, apples, pears etc.
What fascinated me about this cake was that my husband generally hates cooked fruit, but this one actually got his approval I made it twice last week.
Makes: 14cm wide cake ring or cake pan
Prep time: 25 min
Cooking: 55min at 180 degree celsius pre heated oven (middle shelf)
For the batter you need:
- 6 Plumbs de-stoned (half cut into slices and and the other 1/2 copped into chunks)
- 4 eggs Medium ( egg white beaten stiff separately)
- 100g Almond flour / ground almonds – mixed ground nuts work too.
- 40g Coconut flour
- 40g Coconut oil or Butter melted
- 1/2 tsp Cinnamon
- sprinkle of Nutmeg
- 6 tbsp lemons juice
- 1/2 tbsp baking powder
- 1-3 knife-tips Stevia-sweet 90% powder dissolved in 1 table spoons hot water
Note: getting the sweetness to the desired level is a matter of trial and error, the best thing is to start with a smaller amount of whatever Stevia you have on hand, it can be ready-use, liquid or tabs (need to be dissolved too), adding more is easier than diluting – you could end up with a huge amount of treat -Don’t have any Stevia yet? – you can always use normal sweetener products until you are set up.
Process for batter:
Prepare the Plumbs, de-stone them, cut 1/2 into slices and and the other 1/2 copped into chunks.
Place the chunks with the coconut oil with the lemon juice into a pan and heat, melting the oil and cooking the plumbs a bit to get them mushy.
Beat egg whites stiff.
Mix egg yolks with stevia and cinnamon until creamy and well combined.
Add in the mushy oil plumb mix and combine well.
Add in almond flour and coconut flour, mix well.
The batter may be thick and sticky now, add a tiny bit of water or more lemon juice to make it slightly more smooth.
Gently stir in the beaten egg white until the mass is smooth and fluffy.
Fill into the grease proof paper lined cake pan decorate with plumb slices.
Set a side to prepare crumbles.
Prepare the crumbles:
You need:
- 50g Stevia-sweet Baking Granules 1:1
- 50g coconut oil or butter
- 30g ground Almonds
- 20g Coconut flour
- 50g desiccated unsweetened Coconut
- 1/2 tsp. cinnamon or allspice
Melt the coconut oil in a pan.
Add the Stevia-sweet Baking Granules 1:1 mix well.
Add the rest of the ingredients and combine, spoon on top of the batter covered with plumb slices press down a little.
Bake for approx. 55min at 180degree celsius, keep turning every so often for even browning.
Tip: my cake went quite dar after 25min, I covered it with some kitchen foil to stop it going too dark.
Check that the cake is done by piercing the middle with a knitting needle or similar, it the needle come out clean the centre is cooked.
This cake keep well in the fridge for a few days, it can also be frozen.
