  Snowball like christmassy almond macaroons with lots of protein and good nut fat. This easy and quick recipe for macaroons is the only baking I have done since my last post and eating an all paleo style diet. A lot has changed in my approach to food and you will see this reflected in my christmas cookie and cake recipes I am going to post over the next few weeks. Because I didn't use any wafers under the macaroons, they are also gluten free - which I have found works better with my digestion. The sweet business with Stevia in the EU soon officially permitted!

The long battle of biology professor Jan Geuns to get the EU Commision to approve the natural sweet stevia extract for use in Europe since 1997 finally seems to be over. The EU commission gave the green light, the proposal is still under consideration in the EU Parliament and EU Council; theoretically, objections could still be raised until 29 October, but this happening is highly unlikely. The Estimated date for the official green light of the EU Commission is currently 15th November 2011. Professor Geuns is delighted by the progress, but is not yet satisfied. He is already working on another application for admission; he is pushing to ensure that the extracts may be used in greater quantities and especially in “all foods”. This shall make it easier for companies to sweeten with stevia in any way they want, allowing development of a wide variety of processed food sweetened with stevia extract.   So, in future, the 3000 times sweeter than sugar stevia extract will not...

Light lavender fragrant healthy oat biscuits based on Mrs Meiers oat bites sweetened with natural zero calorie stevia sweetener. July is lavender harvest season, most us enjoy the fragrant calming lavender plants in our gardens. I got mine from a Lavender farm on the isle of Jersey, after having taken a tour and tasting the large variety of treats at the farms tea room, I couldn’t go home without taking a couple of small plants for my front garden. The plants have established very well and have grown larger each year. Every year when the flowers are just about to wilt I cut them down, tie them into a bunch and hang them up to dry. Later, I rub the petal buds off the stalk and keep them in an airtight glass for cooking throughout the year.
