This years home made birthday cake is based on one of my favourite gateaux's from my child hood. We had no family celebrations without this traditional cake from south germany. I have used the quick and easy moist sponge roulade base recipe and adapted it to be made with cocoa to form the base of my little black forrest layer cakes. This cake actually nearly never happened. I started with cracking the eggs and the 2nd last one of 6 was kind of rotten which I could only see once it had dripped into the already separated egg whites. I thought not problem I have another 6 eggs. I started over on collecting the egg whites and bam just when I nearly had it another wonky egg. This very rich chocolate coconut fat cake used to be my sisters favourite when we were little, I used to think it's super dangerous on the waist line. Not anymore! My birthday was up, the big 30, me being Paleo required some birthday cake planning.   Sunday is always a great day to spend some time making home made treats, I like how quick these mini cupcakes are. I used my favourite Paleo friendly sponge cake recipe I recently posted, what I like is that it is super moist and free of all the ingredients that are know to trigger inflammatory processes in the body. Really, the recipe combines all the ingredients that are staples in a Palaeolithic diet and forms a treat that looks deceptively unhealthy. I wanted to see if it is possible to make this dairy free, so I created a coconut milk frosting that is as natural as can be. This must be one of the best moist sponge cake base recipes I have converted from a sugar laden, wheat flour original recipe I used to use when I didn't know any better. This is a great little recipe for Paleo Valentine treats or any other special occasion cakes. You can decorate or fill it with Coconut mana or try my lactose and sugar free "Butter-free Buttercream" made with Coconut oil and natural stevia-sweet extract, good for the gut and the soul.
