  Waffles are probably my favourite Sunday baking treat from when I was a child especially in autumn. We didn't make them very often but every now and then we'd get the idea to makes some and the beautiful thing with waffles is the ingredients are basic so you can just make them on a whim if you bake on a regular basis. Have you noticed before how expensive a little squished together bar of fruit and nuts can be? Most energy bars cost around £1 and more which is kind of crazy when you can make them at home, have some productive feeling and save money at the same time. Energy bars are not normally my go to snack since they are usually made with large amounts of dried fruit and lots of nuts, but some times they are a handy emergency snack, especially when you know whats in them. I recently found myself having Bulletproof coffee breakfast left over in the morning, I usually make a 1 liter portion. Since I love jellies and custardy type desserts I though rather than throwing it out I'll make a jelly with it. The red coloured tin of Great Lakes unflavoured gelatin will congeal because it has not been hydrolyzed. I use Great Lakes Gelatin because has a unique combination of amino acids in concentrated levels that promotes rapid re-production of blood cells for healing, it is especially great for bone and joint health care. The low molecular weight protein is easily digested which means the body can use it in minutes after ingestion.   This recipe has been my go to for several month now, every time I am traveling or I am am out and about needing a packable snack I make these. They keep well in the fridge, several days. They don't cause cravings and are just incredibly moist and delicious. My husband keeps asking for these, when I made them I have to hide the ones I want for another time.   This recipe is great for people new to using stevia, the cinnamon helps disguise the slight stevia taste that is so often criticised by people expecting a total equivalent to sugar.
