Christmas – Sour Cream Cookie cutter Cookies with Stevia (Sugar + Gluten free)

Christmas – Sour Cream Cookie cutter Cookies with Stevia (Sugar + Gluten free)

Paleo Christmas Cookies with super food toppings, YES you can have christmas treats without the sugar crash after indulging. By sweetening your cookie dough with natural stevia-sweet sweetener, you save calories and make the treat more blood sugar friendly.  Now, you probably think: how am I going to make the biscuits look nice without using icing sugar or other artificial biscuit decorations? I was panicking about that too, especially since I had booked the christmas cookie making Sunday with a friend weeks and weeks back before I had stopped eating gluten and the occasional refined sugar. I have been on a Paleo way of eating for a few weeks now, and I am feeling so good I did not want to wreck all the good work the healthy food has already done for my wellbeing. I put myself under even more pressure by inviting some more girls to join us for the fun. None of my friends had every tried stevia before, so all I could do is hope for an...

Paleo friendly Almond Macaroons with Stevia

Paleo friendly Almond Macaroons with Stevia

Snowball like christmassy almond macaroons with lots of protein and good nut fat. This easy and quick recipe for macaroons is the only baking I have done since my last post and eating an all paleo style diet. A lot has changed in my approach to food and you will see this reflected in my christmas cookie and cake recipes I am going to post over the next few weeks. Because I didn't use any wafers under the macaroons, they are also gluten free - which I have found works better with my digestion. Makes 38pcs (no wafers needed) Prep time: 10min Baking time: 10 min at 180 degree Celsius  Cooling time: 15 min    You need: 175g/ 5 Large Egg whites 100g Almond flour/ ground almonds couple of drops vanilla extract pinch of salt 1-2 knife-tips Stevia-sweet 90% powder dissolved in 1 table spoons hot water Note: getting the sweetness to the desired level is a matter of trial and error, the best thing is to start with a smaller amount of whatever Stevia you have on hand, it can be ready-use, liquid or...

Mrs Meiers oat bites 2 – soft Lavender

Mrs Meiers oat bites 2 – soft Lavender

Light lavender fragrant healthy oat biscuits based on Mrs Meiers oat bites sweetened with natural zero calorie stevia sweetener. July is lavender harvest season, most us enjoy the fragrant calming lavender plants in our gardens. I got mine from a Lavender farm on the isle of Jersey, after having taken a tour and tasting the large variety of treats at the farms tea room, I couldn’t go home without taking a couple of small plants for my front garden. The plants have established very well and have grown larger each year. Every year when the flowers are just about to wilt I cut them down, tie them into a bunch and hang them up to dry. Later, I rub the petal buds off the stalk and keep them in an airtight glass for cooking throughout the year. If you are not sure when the best time is to harvest your lavender check this nice guide by notmartha, she explains it very well...

Mrs Meiers oat bites

Mrs Meiers oat bites

Great healthy biscuits you can make for when visitors turn up on short notice. This is not a newly invented recipe; my family has used it for years, they remind me of my childhood. I adapted the original composition that my mother brought home from the kindergarten she works at. The cooking lady, Mrs Meier, had made them with the kids there and everyone loved them – because the bites did not have a name they are just called “Mrs Meier biscuits” The great thing was that we were able to make them our selves (usually on Sundays – the shops were never open, so we had to make our own sweets) because of the easy measuring units: Cups – (I grew up in Germany where we do not normally use cup measured recipes) I used insist on using my favourite cup with the flowers on, -tipping and –pouring, stirring – and the best thing: tasting... Yum yum! Children love tasting – since...

Are you staying in this New Year – need a super quick treat, NOW? Try these.... No Fat, No sugar Macaroons - two flavours in one go. Makes 12pcs (on 50mm round wafers) Prep time: 5min Bake time: 6-8min (200Celsius) I love that I can have several flavours in one batch (no need to decide what to make), this time I made Cocoa/ Oats and Rum/Coconut but feel free to adjust flavouring based on your taste; maybe you prefer Cinnamon/ Oats? The recipe below uses my preferred quantities for these different ultra fast mini treats. Wondering why it makes only 12pcs? I try not to make too large amounts of treats as I - like most people, am inclined to finish my plate – always... Main base mixture: 2 large egg whites (whipped stiff) Pinch salt 3 micro scoops of 80% Stevia powder dissolved in 2 table spoons hot water Note: getting the sweetness to the desired level is a matter of trial and error, the best thing is to start with...
