Christmas – Sour Cream Cookie cutter Cookies with Stevia (Sugar + Gluten free)

Christmas – Sour Cream Cookie cutter Cookies with Stevia (Sugar + Gluten free)

Paleo Christmas Cookies with super food toppings, YES you can have christmas treats without the sugar crash after indulging. By sweetening your cookie dough with natural stevia-sweet sweetener, you save calories and make the treat more blood sugar friendly.  Now, you probably think: how am I going to make the biscuits look nice without using icing sugar or other artificial biscuit decorations? I was panicking about that too, especially since I had booked the christmas cookie making Sunday with a friend weeks and weeks back before I had stopped eating gluten and the occasional refined sugar. I have been on a Paleo way of eating for a few weeks now, and I am feeling so good I did not want to wreck all the good work the healthy food has already done for my wellbeing. I put myself under even more pressure by inviting some more girls to join us for the fun. None of my friends had every tried stevia before, so all I could do is hope for an...

Paleo friendly Almond Macaroons with Stevia

Snowball like christmassy almond macaroons with lots of protein and good nut fat. This easy and quick recipe for macaroons is the only baking I have done since my last post and eating an all paleo style diet. A lot has changed in my approach to food and you will see this reflected in my christmas cookie and cake recipes I am going to post over the next few weeks. Because I didn't use any wafers under the macaroons, they are also gluten free - which I have found works better with my digestion. Sugar free Junket, historic milk pudding dessert with strawberries

Sugar free Junket, historic milk pudding dessert with strawberries

Junket must be the most basic pudding there is, no starch or gelatine involved, making it a perfect dessert for Vegetarians and Celiac disease sufferers.  This Junket recipe  is also sugar free, sweetened with natural zero calorie stevia sweetener, which makes it suitable for stage 3 of Candida diets. Earlier this year I got bitten by the bug to want to make my own stuff like my parents did when I was little. I am getting fed up with store bought products that have an endlessly long list of strange unspeakable ingredients in them. I am pedantic about knowing what I am putting in my body in the quest to practice perfect dammage control in all areas of my life. How lucky we are that the internet has a large host of recipes and ideas to improve life and food. Now, I have been testing a lot of ice cream parlours that have established themselves as part of dairy milk farms. Most of them also sell a few other products like milk,...

Italian Castagnaccio Chestnut cup cakes

Italian Castagnaccio Chestnut cup cakes

A gluten free birthday treat for fit and health conscious individuals, sweetened with natural zero calorie stevia sweetener. I came across the Castagnaccio – a traditional Italian dessert cake based on chestnut flour - when looking for a baked birthday gift for my super fit Italian friend Martina; she is from Tuscany, so I thought I'd make her a birthday treat that is from her region since she had to celebrate her birthday in England away from family and friends. The recipe was perfectly suited for what I wanted, it is traditional to Tuscany, has healthy ingredients that are great for any health conscious eater and it's suitable to make in small portions and keeps for a few days as we were going out for food she would have to keep it for later. The chestnut flour cake originating from the Tuscan region uses mainly chestnuts, which represented an important widely available food source for the poor peasants and farmers. Even the other ingredients are all locally...

Silky Chocolate Orange Tofu Dessert

Silky Chocolate Orange Tofu Dessert

5 minute Silky Vegan Chocolaty dessert sweetened with natural zero calorie stevia sweetener. I recently started to experiment with Tofu, and because I have a preference for sweet dishes I whipped up this luxurious cocoa orange cream. I must admit I was a bit apprehensive how tofu would work in a sweet dish, until now I have only had TVP cubes and marinated & plain Tofu for savoury dishes. It did work a treat, the Tofu has not really got a taste of its own so it's the perfect base for any dessert - watch this space, I am sure I'll discover more way of using the Silken Tofu for healthy sweet treats. The texture was thick and creamy which resembled my favourite childhood dessert: Chocolate Pudding cream.   I am not a strict Vegetarian but I do like to keep meat to a minimum and enjoy having options and alternatives. Last week I visited a friend that turned out to be Vegan, I thought that must be a little restrictive...
