Great all round cake decorating cream, change the flavouring to suit the occasion. This Butter-free Buttercream is Paleo and Lactose intolerance diet friendly. Use it for gateaux or cupcakes, spread it on tray bakes or just spoon it out of the cup. I am using  the mayonaise/ butter cream approach to create this stevia sweetened sugar free creamy dream which will keep you blood sugar levels steady with its  low Carb / No Carb make up. This must be one of the best moist sponge cake base recipes I have converted from a sugar laden, wheat flour original recipe I used to use when I didn't know any better. This is a great little recipe for Paleo Valentine treats or any other special occasion cakes. You can decorate or fill it with Coconut mana or try my lactose and sugar free "Butter-free Buttercream" made with Coconut oil and natural stevia-sweet extract, good for the gut and the soul. Zesty fresh! This summery no bake cheesecake features a mousse texture with sweet and zesty refreshing flavour. Last weekend I found myself longing for a fresh fruity sweet treat. My fruit bowl had an excess amount of lemons in it so I quickly whipped up a no bake cheese cake to be ready and set by the time I would be back from teaching my Saturday fitness classes – something to look forward to. This recipe is great for Diabetics as it uses Stevia for sweetening which is a non-calorific, naturally sweet herb from Paraguay. It is said to encourage the release of insulin and normalizes the response to glucose, particularly in type 2 diabetes. In Latin America, it is utilized as an inexpensive therapy for hyperglycaemia. I have been making this particular recipe nearly every weekend since I developed it for my husband’s birthday, his comment: “it’s the absolute best cake you made yet”.
