Butter-free Buttercream with Coconut oil and Stevia

Great all round cake decorating cream, change the flavouring to suit the occasion. This Butter-free Buttercream is Paleo and Lactose intolerance diet friendly. Use it for gateaux or cupcakes, spread it on tray bakes or just spoon it out of the cup. I am using  the mayonaise/ butter cream approach to create this stevia sweetened sugar free creamy dream which will keep you blood sugar levels steady with its  low Carb / No Carb make up. Check out this great  blog post by Mark Sisson on why controlling the carbohydrates/ sugar intake could help you stay healthy and why it is so important to keep the blood sugar levels steady to avoid giving yourself  Type 2 diabetes. Now I should probably also calm you down on the large amount of fat that goes into this recipe, it is good fat! Coconut oil is highly beneficial, I have lots of it every day and I am staying the same, what makes me explode is Carbs, Fat can make you happy and calm. Listen to...

Coconut Flour Almond-Chocolate Sponge Cake – Sugar FREE with Stevia

Coconut Flour Almond-Chocolate Sponge Cake – Sugar FREE with Stevia

This must be one of the best moist sponge cake base recipes I have converted from a sugar laden, wheat flour original recipe I used to use when I didn't know any better. This is a great little recipe for Paleo Valentine treats or any other special occasion cakes. You can decorate or fill it with Coconut mana or try my lactose and sugar free "Butter-free Buttercream" made with Coconut oil and natural stevia-sweet extract, good for the gut and the soul. Not too heavy or sweet. Fill it with fresh fruit and whipped cream or just have it as it is, this recipe has definitely made it into my personal top 10 cake bases. Makes: a small 12cm heart shaped sponge cake 7cm high  - enough for two to share Prep time: 10 min Cooking: 18min at 180 degree celsius   For the sponge cake base you need: 2 medium eggs 40g ground almonds - mixed ground nuts work too. 2 tbsp. unsweetened Cocoa powder 30g organic virgin Coconut oil 1 tbsp hot water with 1 tbsp instant coffe - optional! couple of...

Gluten free high fiber breakfast PANCAKES with stevia

Gluten free high fiber breakfast PANCAKES with stevia

Alternative sweet breakfast for everyone following a low carb diet that can not face a savory paleo breakfast. As I mentioned in my previous post, - a long time ago, sorry I was so busy there was not time for posting - I am eating as low carb paleo inspired as possible to avoid triggering inflammatory processes in my joints. I used to love porridge in the morning, when I found out I'd best stop having grains I started panicking a bit! What was I supposed to have instead? Meat for breakfast? Eggs every day? My happy medium is to have pancakes with a variety of flavours and organic yoghurt or quark. I know the serious paleos out there will say, there was no dairy in a cave man's diet. I like dairy and do not seem to have any adverse reactions to it, so I like to keep it in my menues. Yes, it does take a little bit of time in the morning to prepare the pancakes, around 20...

Christmas – Sour Cream Cookie cutter Cookies with Stevia (Sugar + Gluten free)

Christmas – Sour Cream Cookie cutter Cookies with Stevia (Sugar + Gluten free)

Paleo Christmas Cookies with super food toppings, YES you can have christmas treats without the sugar crash after indulging. By sweetening your cookie dough with natural stevia-sweet sweetener, you save calories and make the treat more blood sugar friendly.  Now, you probably think: how am I going to make the biscuits look nice without using icing sugar or other artificial biscuit decorations? I was panicking about that too, especially since I had booked the christmas cookie making Sunday with a friend weeks and weeks back before I had stopped eating gluten and the occasional refined sugar. I have been on a Paleo way of eating for a few weeks now, and I am feeling so good I did not want to wreck all the good work the healthy food has already done for my wellbeing. I put myself under even more pressure by inviting some more girls to join us for the fun. None of my friends had every tried stevia before, so all I could do is hope for an...
