Holding up birthday cake traditions with juicy chocolate covered carrot cake.
Last month was my husbands birthday. I had planned to make him a cake as I usually do, this time I went for the carrot cake with chocolate covering. It is a tradition from my childhood, in my family there would be no birthday without a chocolate covered carrot cake! It actually lends itself very well to have candles stuck in it.
Now, I needed to change the traditional receipe slightly to make it gluten free to allow me to have some too, I didn't want to miss out on this yummy treat.
When I looked at the ingredients I actually found that this carrot cake is great for paleo dietary requirements, lots of nuts = healthy fats, eggs = protein, vegetable = fiber, no flour needed. And if one is very serious the chocolate covering can be omitted. For this cake I have used Lindt 85% chocolate to ensure that my husband would definitely like it. Alternatively you can use a 100%...
Zesty, refreshing lactose free lime coconut manna truffles with cocoa butter.
Nice recipe I mixed up with all ingredients I like a lot, especially the coconut manna/ butter is so delicious I wanted to use it in combination instead of just spooning it out of the glass. The Lime coconut truffles are suitable for Paleo and Vegetarian as well as people with Lactose intolerance - really a great sweet for everyone.
The recipe is very simple too, so kid’s can help; they will love getting their fingers sticky when forming the little zesty truffle balls.
I like to use re-usable silicon cases to avoid wasting paper or packaging.
We are also ticking the blood sugar friendliness box too with the help of the all natural stevia-sweet extract powder or liquid.
Make it with Coconut oil, fresh egg yolks and sweeten it up with all natural stevia-sweet extract.
I think next time I will use fresh orange juice to make these, its bound to work well.
Makes: 10 little balls
Prep time: 10 min
Forming the balls: 10-15min
You need:
50g coconut...
Great all round cake decorating cream, change the flavouring to suit the occasion.
This Butter-free Buttercream is Paleo and Lactose intolerance diet friendly.
Use it for gateaux or cupcakes, spread it on tray bakes or just spoon it out of the cup.
I am using the mayonaise/ butter cream approach to create this stevia sweetened sugar free creamy dream which will keep you blood sugar levels steady with
its low Carb / No Carb make up. Check out this great blog post by Mark Sisson on why controlling the carbohydrates/ sugar intake could help you stay healthy and why it is so important to keep the blood sugar levels steady to avoid giving yourself Type 2 diabetes.
Now I should probably also calm you down on the large amount of fat that goes into this recipe, it is good fat! Coconut oil is highly beneficial, I have lots of it every day and I am staying the same, what makes me explode is Carbs, Fat can make you happy and calm. Listen to...
This must be one of the best moist sponge cake base recipes I have converted from a sugar laden, wheat flour original recipe I used to use when I didn't know any better.
This is a great little recipe for Paleo Valentine treats or any other special occasion cakes.
You can decorate or fill it with Coconut mana or try my lactose and sugar free "Butter-free Buttercream" made with Coconut oil and natural stevia-sweet extract, good for the gut and the soul. Not too heavy or sweet.
Fill it with fresh fruit and whipped cream or just have it as it is, this recipe has definitely made it into my personal top 10 cake bases.
Makes: a small 12cm heart shaped sponge cake 7cm high - enough for two to share
Prep time: 10 min
Cooking: 18min at 180 degree celsius
For the sponge cake base you need:
2 medium eggs
40g ground almonds - mixed ground nuts work too.
2 tbsp. unsweetened Cocoa powder

Alternative sweet breakfast for everyone following a low carb diet that can not face a savory paleo breakfast.
As I mentioned in my previous post, - a long time ago, sorry I was so busy there was not time for posting - I am eating as low carb paleo inspired as possible to avoid triggering inflammatory processes in my joints. I used to love porridge in the morning, when I found out I'd best stop having grains I started panicking a bit! What was I supposed to have instead?
Meat for breakfast? Eggs every day?
My happy medium is to have pancakes with a variety of flavours and organic yoghurt or quark.
I know the serious paleos out there will say, there was no dairy in a cave man's diet. I like dairy and do not seem to have any adverse reactions to it, so I like to keep it in my menues.
Yes, it does take a little bit of time in the morning to prepare the pancakes, around 20...
