It can feel like all the nice things you used to be able to eat are now off limits. Luckily you are not alone, there are many very creative gluten free bakers that are happy to share recipes that work. One of the more difficult things to re-create is sweet pastry as it mainly consist of sugar and fat which hold the dough together, gluten free itself is not too difficult as you still have the sugar to keep things sticking together, once you decide that you want to eliminate sugar too it becomes a challenge. Zesty, refreshing lactose free lime coconut manna truffles with cocoa butter. Nice recipe I mixed up with all ingredients I like  a lot, especially the coconut manna/ butter is so delicious I wanted to use it in combination instead of just spooning it out of the glass. The Lime coconut truffles are suitable for Paleo and Vegetarian as well as people with Lactose intolerance - really a great sweet for everyone. The recipe is very simple too, so kid’s can help; they will love getting their fingers sticky when forming the little zesty truffle balls. I like to use re-usable silicon cases to avoid wasting paper or packaging. July is lavender harvest season, most us enjoy the fragrant calming lavender plants in our gardens. I got mine from a Lavender farm on the isle of Jersey, after having taken a tour and tasting the large variety of treats at the farms tea room, I couldn’t go home without taking a couple of small plants for my front garden. The plants have established very well and have grown larger each year. Every year when the flowers are just about to wilt I cut them down, tie them into a bunch and hang them up to dry.
